Can You Toss a Bunch of Stuff in a Pot, and Have Soup in Minutes?

Heck yes you can!


  • You just got home from a terrible day at work.

  • You're tired.

  • You're cranky.

  • You promised you would have dinner ready when your spouse got home.

  • You would rather have a glass of wine, and watch The Office for the 75th time in a row, than even eat.


What is this life right now???


Here is what you're going to do:


  • You take half a bag or frozen peppers and onions.

  • You add it to a pot with some olive oil and bouillon (I used better than bouillon here but any super concentrated seasoning mix will do. Don't even judge me here, you're gonna wanna kiss me when you're on the couch with your wine in less than 15 minutes).

  • You cut up two large carrot (Or hell, use frozen, who wants to chop right now?).

  • You add a tsp. of Herbs De Provence, a tsp. of dried oregano, two tsps. of garlic powder, and a generous shake of crushed red pepper flakes.

  • You saute for as long as it takes you to chop some pre-cooked chicken sausage (I used Al Fresco Italian chicken sausage).

  • You add the sausage to the pan, and brown.

  • You add a box of low sodium chicken broth.

  • You add salt and pepper to taste.

  • You add a box of frozen spinach.

  • You put a lid on it and walk away for 15 minutes.

  • You sit on the couch and wait.

  • You add one cup of orzo at the 15 minute mark.

  • You cook for 9 more minutes.

  • You taste for seasoning.

  • You realize you added too much salt, and add a cup of water to mellow out the flavor.

  • You don't judge me for over-salting my soup.

  • You enjoy the hell out of this soup with some crusty bread.

  • You forgive her for the format of this recipe, because it's not even really a recipe, just an idea of a recipe.

  • You enjoy the rest of your night in peace.
